Krazy Good Kale Salad
Now, I’m not usually one for fruit and salad together, but this is too amazing to pass up! Here goes:
Ingredients for the Salad:
1 large bunch of kale (any variety destemmed)
3 Tbsp hemp seeds
3 Tbsp raw sunflower seeds
1/2 cup apple, sliced
1/2 avocado, diced
cherry tomatoes, diced
1/2 cup oranges (i used clementines because they are in season)
1 small sweet onion, thinly sliced
Salt and pepper to taste
Ingredients for the Dressing:
2 1/2 Tbsp tahini
3 Tbsp seasoned rice vinegar
2 tsp apple cider vinegar
1-2 tsp healthy oil (I used sunflower nut oil)
1 tsp grade B maple syrup (optional – use only if you need to cut the bitterness of the tahini)
1.Wash and dry the kale. Rip leaves by hand. Destem and discard stems (save them for juicing or compost).
2. Whisk together the liquid ingredients together. Remember, most are to taste. Experiment!
3. Add destemmed kale to the dressing. Massage the kale with your hands to marinate. Be more gentle for a crispier salad.
4. Fold in the hemp seeds and sunflower seeds.
5. Add the remaining ingredients on top.
You can definitely use any “topping’s” that you like. Be creative! You definitely can’t go wrong with this!
